Lumpia, which is a famous Filipino dish, is a spring roll that is deep-fried like a wrapped stick of meat. Lumpia is filled with ground or finely minced pork, beef or vegetables (lumpi vegetable) then served with variety of sauce, and the most popular one is vinegar with chili. One variety of lumpia that I like is lumpia shanghai (meat).

Lumpia  shanghai is one of the Filipino recipes Filipinos usually make to serve during birthday parties, get together with friends and other occasions. It is also a popular snack food in offices, schools and even at home.
Since most Filipinos cook Lumpia, the craving for a unique and thrilling taste in it and the desire to have a different flavor made me try this recipe which has proven to be loved by most of my family members and friends.

Ingredients:
•    1 lb. ground pork ( I prefer pork fresh from the market compared to frozen ones)
•    1 cup chopped shrimps (I prefer shrimps fresh from the market compared to frozen or packed ones)
•    1/4 cup finely chopped shallots or onions (I prefer shallots but if not available, onion should be fine too)
•    1/2 cup finely chopped carrots
•    2 whole eggs
•    3 tbsp. soy sauce
•    3 dashes of sesame oil
•    salt and pepper to taste
•    lumpia wrapper
•    vegetable oil for frying

Cooking Procedures:
1.    Combine all ingredients in a bowl.
2.    Mix ingredients until well blended.
3.    Wrap blended ingredients into thin rolls in lumpia wrappers.
4.    Deep fry in boiling cooking oil.
5.    Drain on paper towels and then transfer to a serving platter.
6.    Serve with your favorite sauce (vinegar with chili or catsup).
